1 ½cupsthickly sliced, tart eating apples (such as Granny Smiths)
Topping
½cupraw sugar
6 ½Tablespoonsunsalted butterchilled and diced
1cupall-purpose floursifted
Instructions
Cake Batter
Preheat the oven to 350°.
Grease an 8 ½" x 4 ½" x 2 ½" loaf pan and line with waxed paper.
Using an electric mixer beat the butter until creamy, then add the sugar and beat until light and fluffy.
Gradually beat in the eggs, then the vanilla.
Using a large metal spoon, fold in the flour and enough milk to make a soft mixture that just drops from the spoon.
Transfer the mixture to the prepared loaf pan and smooth the surface with a spatula.
Arrange an even layer of apple slices over the top.
Topping
To make the topping, put all the ingredients in a food processor and pulse until mixture looks like coarse crumbs.
Sprinkle the topping evenly over the apples, then press down gently until firmly packed. Bake for about 1 hour until golden and a wooden skewer inserted into the center comes out clean. Let cool for 5 minutes and then invert onto a wire rack. Serve warm.
