Country Apple Cake

This cake batter is quick to make and has a wonderfully crunchy streusel topping.
Plan Ahead Note: 7 Tablespoons of butter and the eggs needs to be brought to room temperature.

Ingredients
  

Cake Batter

  • 7 Tablespoons unsalted butter room temperature
  • ½ cup+1 Tablespoon granulated sugar
  • 2 large eggs at room temperature and lightly beaten
  • ½ teaspoon pure vanilla extract
  • 1 cup all-purpose flour sifted
  • 2-3 Tablespoons milk
  • 1 ½ cups thickly sliced, tart eating apples (such as Granny Smiths)

Topping

  • ½ cup raw sugar
  • 6 ½ Tablespoons unsalted butter chilled and diced
  • 1 cup all-purpose flour sifted

Instructions
 

Cake Batter

  • Preheat the oven to 350°.
  • Grease an 8 ½" x 4 ½" x 2 ½" loaf pan and line with waxed paper.
  • Using an electric mixer beat the butter until creamy, then add the sugar and beat until light and fluffy.
  • Gradually beat in the eggs, then the vanilla.
  • Using a large metal spoon, fold in the flour and enough milk to make a soft mixture that just drops from the spoon.
  • Transfer the mixture to the prepared loaf pan and smooth the surface with a spatula.
  • Arrange an even layer of apple slices over the top.

Topping

  • To make the topping, put all the ingredients in a food processor and pulse until mixture looks like coarse crumbs.
  • Sprinkle the topping evenly over the apples, then press down gently until firmly packed. Bake for about 1 hour until golden and a wooden skewer inserted into the center comes out clean. Let cool for 5 minutes and then invert onto a wire rack. Serve warm.
