Zucchini Bread
This is moist and cinnamony. Perfect recipe to make one for a gift and one for yourself!
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 3 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons vanilla extract
- 1 cup canola oil
- 3 eggs
- 3 cups shredded zucchini drained on paper towels
Preheat oven to 350°.
Grease and flour two 9" x 5" x 3" loaf pans.
In a large mixing bowl, combine all ingredients and blend well.
Divide batter into the two pans and smooth the top with a spatula.
Bake at 350° for 1 hour or until a wooden pick inserted into the center comes out with a few moist crumbs.
