Roasted Asparagus with Balsamic Browned Butter

Roasted Asparagus with Balsamic Browned ButterThis recipe is from Cooking Light and not only is it quick and easy, the Asparagus cooks perfectly.

Ingredients:

2 lbs. asparagus spears, trimmed
Olive oil
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 Tablespoons butter
2 teaspoons soy sauce
1 teaspoon balsamic vinegar
Grated lemon rind

Preheat oven to 400 degrees.  Arrange asparagus in a single layer on a baking sheet coated with olive oil.  Sprinkle with salt and pepper.  Bake at 400 degrees for 12 minutes.  Melt butter in a small skillet over medium heat; 3 minutes or until lightly browned, skiing the pan continually.  Remove from heat; stir in soy sauce and vinegar.  Drizzle over asparagus, tossing to coat.  Garnish with cracked pepper and grated lemon rind.

Yield:  8 servings
