Pork Sliders

These are a snap to throw together for dinner and the flavor really dresses up the Hawaiian rolls.


1 lb. pork tenderloin
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon chili powder
salt and pepper
1/3 cup yellow mustard
2 Tablespoons sweet relish
1 Tablespoon minced shallot
12 King’s Hawaiian rolls
6 slices colby cheese
3/4 cup jarred roasted red bell peppers, sliced
6 leaves romaine lettuce

Slice pork into 1/4″ rounds.  Combine cumin, oregano, chili powder, and salt and pepper.  Lightly spray the pork with olive oil and sprinkle on the spices onto both sides.  Heat the grill to medium, and cook for 3-4 minutes a side.  Combine mustard, relish, and shallot in a bowl.  Spread onto Hawaiian rolls.  Top with pork, cheese, peppers, and lettuce.
