Pork and Sweet Pepper Kebabs

This is a quick meal that you can throw on the grill, make some rice, and have a delicious dinner without much fuss.  You can presoak wooden skewers in water for 30 minutes before using, or metal skewers work well too.

Ingredients:

1/4 cup soy sauce
1 Tablespoon fresh lemon juice
1 Tablespoon ketchup
2 teaspoons brown sugar
1 teaspoon Worcestershire sauce
1/4 teaspoon crushed red pepper
4 garlic cloves, minced
1-1lb. pork tenderloin trimmed and cut into 1/2″ cubes
1/4 teaspoon salt
1 package mini bell peppers

Place first seven ingredients in a large ziplock bag, mix well.  Add pork cubes and refrigerate one hour, turning after 30 minutes.  Preheat grill to medium-high heat.  Remove pork from bag and discard marinade.  Thread pork evenly onto skewers, sprinkle with salt.  Thread mini bell peppers on skewers.  Arrange skewers in a single layer on grill rack and grill 3-4 minutes a side.
