3/4 cup panko bread crumbs
2 teaspoons ground fresh oregano
2-1lb. pork tenderloins
2 Tablespoons dijon mustard
Mix bread crumbs and oregano in a baking dish. Spread the Dijon mustard over the pork. Roll pork in the breadcrumb mixture. Place in a roasting pan and roast in the oven at 450 degrees for 30-45 minutes. Serve with mashed potatoes.
