Make these carrots about 30 minutes before the turkey is done.
6 cups water
5 cups thinly sliced carrots
3 Tablespoons fresh flat-leaf parsley, chopped
2 Tablespoons honey
1/2 teaspoon grated orange rind
In a medium saucepan, bring water to a boil. Add carrots and cook for 20 minutes or until tender when pierced with a fork. Drain. Place carrots and remaining ingredients in a large bowl and toss until mixed well.
