Checkerboard Spice Cake

This is fall in a loaf pan!  Take the time to divide the batter, it looks great on a plate and it tastes even better!
Plan Ahead Note: the butter needs to be softened and the eggs brought to room temperature.

Ingredients
  

  • ½ cup butter softened to room temperature
  • 1 cup granulated sugar
  • 2 eggs at room temperature
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • cup milk
  • ¼ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 3 Tablespoons molasses

Instructions
 

  • Preheat oven to 350°.
  • Cream butter and gradually add in sugar, mixing well.          
  • Add eggs, one at a time, beating mixture well after each addition.
  • Combine flour, baking powder, and salt.
  • Add to butter mixture alternately with milk, beginning and ending with flour mixture.
  • Divide the batter in half.
  • Add remaining ingredients to one half of the batter, stirring until smooth.
  • Drop batter by Tablespoonfuls into a greased 9" x 5" x 3" loaf pan, alternating dark and light batter.
  • Bake at 350° for 1 hour or until wooden pick inserted into center comes out clean.
