1 1/3 cups flour
1/2 cup packed brown sugar
3/4 cup granulated sugar
3/4 cup cold butter
1 cup old fashioned oats
1-8 oz. package cream cheese, softened
1-15 oz. can pumpkin
1 Tablespoon pumpkin pie spice
Line a 13×9 pan with aluminum foil. Grease foil.
Mix flour, brown sugar and 1/4 cup sugar in medium bowl. Cut in butter with pastry blender until mixture represents course crumbs. Stir in oats. Reserve 1 cup oat mixture and press remaining mixture into bottom of pan. Bake 15 minutes at 350 degrees.
Beat cream cheese, remaining 1/2 cup sugar, eggs, pumpkin and pumpkin pie spice in mixer until well blended. Pour over crust and sprinkle with reserved crumb mixture.
Bake 25 minutes. Cool completely. Cut into bars and store in refrigerator.
Yield: 24 bars
