I have been making this recipe for years as it is a great compliment to the Enchiladas I make on Christmas Eve. Pop this into the oven right before you sit down for dinner and it will be nice and warm when you are ready for dessert.
4 cups granny smith apples, washed, peeled, and chopped
2 cups fresh cranberries, rinsed
1 1/2 teaspoons fresh lemon juice
1 cup sugar
1 1/2 cups quick-cooking oats
1/3 cup firmly packed brown sugar
1/2 cup butter, melted
Vanilla ice cream
Place apples and cranberries in an 11″ x 7″ baking dish. Pour lemon juice and then sugar over fruit. Combine oats, brown sugar, and butter until crumbs form. Spread over fruit mixture. Bake at 325 degrees for 1 hour or until browned and bubbly. Let rest for 5 minutes and serve with Vanilla ice cream.
