This recipe is adapted from Fitness Magazine. I have to admit, I did not make it “fit” since I used regular sweetened condensed milk instead of fat free. My kids requested using mini graham cracker tarts versus the phyllo dough next time. I think I would like both.
1-14 oz. can sweetened condensed milk
1/2 teaspoon freshly grated key lime zest
1/2 cup key lime juice (about 10 key limes)
24 prebaked miniature phyllo dough shells
In a small bowl, whisk together sweetened condensed milk, lime zest, and lime juice. Cover and chill about two hours or until mixture is slightly thickened. Spoon about 1 Tablespoon of chilled filling into each phyllo dough shell and top with whipped cream when serving.
Yield: 24 tarts
