Chocolate Peanut Butter Cupcakes

Two of my favorite foods, mixed together in one terrific cupcake!

Ingredients:

3/4 cup flour
1/4 cup cocoa
1 1/2 teaspoons baking powder
Dash of salt
1/2 cup sugar
1/2 cup brown sugar
1/4 cup butter, softened
1/2 cup creamy peanut butter
1 egg
1/2 teaspoon vanilla
2/3 cup milk
3/4 cup semi-sweet chocolate chips
1 1/2 cups powdered sugar
3/4 cup cocoa
1/2 cup butter, softened
2 Tablespoons milk
1 Tablespoon strong brewed coffee

Mix flour, cocoa, baking powder, and salt together in a small bowl.  In an electric mixer, combine sugars and butter and beat until well blended.  Add peanut butter, egg, and vanilla and mix well.  Add flour mixture, alternately with milk.  Add the chocolate chips.  Drop batter into muffin tins lined with paper muffin cups.  Bake at 350 degrees for 20 minutes.  Let cool in pan for 10 minutes.  Once cupcakes are completely cool, frost with chocolate frosting.

Chocolate Frosting:  Mix powdered sugar through coffee in a food processor.
