You probably had these when you were little. Ritz crackers with peanut butter smeared in between two, dipped in chocolate. The sweet/salty combination is delicious! Tip: Do not substitute butter for the shortening. The shortening makes it easier to dip the crackers.
2 sleeves Ritz Crackers
Creamy peanut butter
10 oz. semi-sweet chocolate chips
5 oz. bittersweet chocolate chips
1 teaspoon shortening
Spread a teaspoon of peanut butter between two Ritz Crackers. Repeat until all the crackers are made into sandwiches. In a double boiler over medium heat, melt the semi-sweet and bittersweet chocolate chips and shortening. Remove from heat. Using a rubber spatula, coat the cracker sandwich completely with chocolate. Remove with a fork and place on a parchment paper covered cookie sheet. Place in the refrigerator until chocolate is set.
