Chocolate Peanut Butter Sandwiches

Chocolate Peanut Butter Sandwiches

You probably had these when you were little.  Ritz crackers with peanut butter smeared in between two, dipped in chocolate.  The sweet/salty combination is delicious!  Tip:  Do not substitute butter for the shortening.  The shortening makes it easier to dip the crackers.

Ingredients

  • 2 sleeves Ritz Crackers
  • creamy peanut butter (I used Jif natural)
  • 10 oz. semi-sweet chocolate chips
  • 5 oz. bittersweet chocolate chips
  • 1 teaspoon shortening

Instructions

  • Spread a teaspoon of peanut butter between two Ritz Crackers.  Repeat until all the crackers are made into sandwiches.
  • In a double boiler over medium heat, melt the semi-sweet and bittersweet chocolate chips and shortening.
  • Remove from heat.  Using a rubber spatula, coat the cracker sandwich completely with chocolate.
  • Remove with a fork and place on a parchment paper covered cookie sheet.
  • Place in the refrigerator until chocolate is set.
