Chocolate-Oatmeal Parfaits


2 cups milk
2/3 cup sugar
1/3 cup unsweetened cocoa, sifted
3 Tablespoons cornstarch
1/8 teaspoon salt
1 egg
4 oz. semi-sweet chocolate, chopped
1 teaspoon vanilla
1 1/2 cups Quick Oatmeal Granola (see below)
3 cups thawed whipped topping

Quick Oatmeal Granola

1/4 cup honey
2 Tablespoons butter, melted
1/2 teaspoon vanilla
1 1/2 cups uncooked regular oats
1/2 cup flour
1/4 teaspoon salt

Whisk together first five ingredients in a medium saucepan over medium high heat, and cook, whisking constantly, for five minutes.  Gradually mix 1/3 cup of the hot milk mixture into the egg in a small bowl.  Whisk egg mixture into remaining hot milk mixture.  Cook whisking constantly for 3 minutes or until thickened.  Remove from heat and add chopped chocolate, stirring until chocolate melts.  Stir in vanilla.  Pour mixture into a glass bowl.  Place plastic wrap directly on top of warm mixture to keep a film from forming and chill two hours.

Make granola by stirring together honey and next two ingredients in a small bowl.  Stir together oats, flour, and salt in a large bowl.  Add honey mixture to oatmeal mixture, stirring until combined.  Spread oat mixture onto a lightly greased baking sheet.  Bake at 350 degrees for 20 minutes, stirring often.

To make parfaits, layer 1 1/2 Tablespoons granola, 3 Tablespoons chocolate mixture, and 1/4 cup whipped topping into each of the parfait glasses.  Repeat layers once and sprinkle the top of each parfait with 1 Tablespoon granola.  Serve immediately.

Yield:  6 parfaits
