Cinnamon Chocolate Cake

IMG_0679The spice of cinnamon with the chocolate make this a decadent cake.  No frosting skills necessary, just pour the glaze over the hot cake and let it cool.


2 cups flour
2 cups sugar
1 cup butter
1/4 cup cocoa
1 cup water
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 eggs
1 teaspoon salt
1/2 cup butter
1/4 cup cocoa
1/3 cup milk
1 teaspoon vanilla extract
1 lb. confectioners’ sugar

Sift the flour and sugar into a large bowl.  In a saucepan add 1 cup butter, 1/4 cup cocoa, and 1 cup water.  Bring to a boil and pour over flour mixture, and combine.  Add buttermilk, baking soda, cinnamon, vanilla, eggs, and salt, mixing well.  Pour into a greased and floured 9″ x 13″ pan.  Bake at 400 degrees for 30-35 minutes or until a wooden pick inserted into the center comes out clean.  To make the frosting, bring 1/2 cup butter, 1/4 cup cocoa, and milk, along with the vanilla to a boil in a large saucepan.  Remove from heat and add the confectioners’ sugar gradually, whisking until smooth and slightly thickened.  Pour over the hot cake and let cool.

Yield:  24 squares
