This is another great dish during the summer months. Grill chicken and serve with crackers, bread, or on a bed of lettuce.
3/4 cup mayonnaise
1/4 cup chopped cilantro
3 Tablespoons fresh lime juice
1 teaspoon garlic, minced
1/2 teaspoon ground cumin
2 stalks celery, finely chopped
4 cups chopped, cooked chicken
Whisk mayonnaise, cilantro, lime juice, garlic, and cumin in a large bowl. Add celery and chicken. Refrigerate until ready to use.
