2 Tablespoons olive oil
2 cloves garlic, minced
4 cups cubed french bread
2 Tablespoons lemon juice
2 Tablespoons red wine vinegar
2 Tablespoons water
1/2 teaspoon Dijon mustard
2 egg yolks
1 head of romaine lettuce, rinsed and chopped
4 chicken breasts, grilled and chopped
1/2 cup grated Parmesan cheese
Heat oil in a small saucepan over medium heat. Add garlic and stir for 30 seconds. Remove from heat. Strain olive oil and toss remaining garlic.
Cube bread and place on a silicone mat on a cookie sheet. Drizzle olive oil over bread and toss with your hands coating all pieces.
Broil in the one for 2 minutes or until light brown. Turn oven off, but leave pan in oven.
Add lemon juice, vinegar, mustard, and egg yolks in a bowl and mix well. Pour into a saucepan over medium heat and stir just until thickened. Toss chopped chicken, lettuce, and dressing in a bowl. Add cheese, bread cubes, salt, and pepper, mixing well.
