Zucchini Bread

This is moist and cinnamony.  Perfect recipe to make one for a gift and one for yourself.


3 cups all-purpose flour
2 cups granulated sugar
3 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons vanilla extract
1 cup vegetable oil
3 eggs
3 cups shredded zucchini, drained on paper towels

Grease and flour two 9″ x 5″ x 3″ loaf pans.  In a large mixing bowl, combine all ingredients and blend well.  Divide batter into the two pans and smooth the top with a spatula.  Bake at 350 degrees for 1 hour or until a wooden pick inserted into the center comes out with a few moist crumbs.
