Slow Cooker Meatloaf on a Bed of Potatoes

You can slightly mash the potatoes and the sauce is slightly sweet, making it very kid friendly.  Use two large spatulas to lift the meatloaf onto a cutting board to slice it.  Add a side salad or steamed green beans to complete the meal.  This meatloaf also works well for sandwiches the next day.


2 Tablespoons olive oil
3 large russet potatoes, peeled and cut into 1″ cubes
2 lbs. ground sirloin
2 eggs, beaten
3/4 cup crushed saltine crackers
3/4 cup ketchup
1 teaspoon salt
A few grinds of black pepper


3/4 cup ketchup
1/3 cup firmly packed brown sugar
1 teaspoon Dijon mustard

Grease the bottom of the slow cooker with olive oil.  Add the potatoes, toss lightly to coat and arrange in a neat bed.  Combine the ground beef, eggs, crumbs, ketchup, salt, and pepper in a large bowl.  Using a large fork, mix gently but thoroughly, being careful not to compact the meat.  Shape the mixture into an oval or round loaf , and place on top of the layer of potatoes.  Top make the topping, combine the ingredients in a small bowl and pour over the meatloaf.  Cook on low for 8 hours.
