Slow Cooker Beef Brisket Tacos


2 onions, sliced
2 celery stalks, sliced
2 garlic cloves, minced
3 lb. beef brisket
2 teaspoons salt
1 1/2 teaspoons ground chipotle powder
1 cup chopped cilantro

Place onions, celery, and garlic in slow cooker.  Rub brisket with salt and chipotle powder and place on top of vegetables in slow cooker.  Top with cilantro.  Cook on low for 8-9  hours.  Remove brisket and shred meat with two forks.  Place in tortillas, top with shredded cheese and salsa.
