When it is too cold to put burgers out on the grill, this is the best recipe for flipping them on the stove.
1 lb. ground sirloin
1/2 teaspoon kosher salt
1 Tablespoon mayonnaise
1 Tablespoon mustard
2 teaspoon ketchup
2 slices applewood bacon, chopped
3 cups sliced yellow onion
1 Tablespoon finely chopped chives
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
4 hamburger buns or Kaiser rolls
4 (1/4″ thick) tomato slices
1 cup shredded butter lettuce
To prepare the patties, divide the beef into 4 portions, lightly shaping each into patties and sprinkle with salt. Cover and refrigerate 30 minutes. To make the sauce, combine mayonnaise, mustard, and ketchup and set aside. Cook bacon in a nonstick skillet over medium-low heat until crisp. Remove bacon from pan with a slotted spoon. Add onion to drippings in pan, cook 15 minutes or until golden brown. Combine bacon, onions, chives, Worcestershire sauce, and pepper in a small bowl. Heat cast-iron skillet over medium heat. Add patties; cook 2-4 minutes on each side until done. Spread 2 teaspoons sauce on bun. Add patty, onions, a tomato slice and lettuce.
