This has the consistency of Guacamole, but it is made with pinto beans and can be made very quickly!
2-15 oz. cans pinto beans, drained
1-4 oz. can diced green chilies
2 Tablespoons olive oil
1 Tablespoon lime juice
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
In a food processor, combine all ingredients except for tortilla chips. Mix until well blended but beans still have some texture. Cover and refrigerate until ready to serve.
Yield: 2 1/2 cups
