Treat Tuesday-Pumpkin Apple Muffins

It’s finally starting to feel a little like fall and the leaves are beginning to pile up in the yard.  This is when I go into baking overdrive and while I still may be wearing short sleeves with my Halloween costume, it’s time to deep clean the kitchen and start creating wonderful aromas to take my mind off trick or treating!


I have been making these muffins for years and what I love about them is that they are easy to assemble and they are super moist. Pumpkin pie spice is a key ingredient, but make sure your canister is fresh.  I was about to dip my measuring spoon in mine when I realized my spice had expired last year!  Have I mentioned this is a great time to clean out your spice cabinet?!

The canned pumpkin, eggs, and melted butter along with the granny smith apple pieces make this batter pretty much a stir and pour.

Once the muffin tins are full, a light dusting of sugar and pumpkin pie spice add the perfect topping.

Enjoy with a mug of tea or mulled cider.
