Treat Tuesday-Berry Cheesecake Bars

These are great are a wonderfully creamy treat that looks as good as it tastes!

Start with Pepperidge Farms Bordeaux Cookies.  I have only had these in the big circular tins you often see at office parties, but the rectangular ones you purchase at the grocery store make the best crust for these bars.

Crush them in a food processor, add some melted butter and lay them out in a rectangular pan.

Next make the raspberry and blueberry sauces.  It may seem a tad labor intensive but it is worth it!  Start with fresh raspberries.

Add some water and sugar in a saucepan and cook until soft.

Repeat with the blueberries.

Then strain out the solids and you are left with a wonderful blueberry and raspberry syrup.

Whip up the cheesecake (make sure your cream cheese and eggs are room temperature!)  Spread over the cookie crust.

Now dollop the blueberry and raspberry sauce all over the top of the cheesecake.

Swirl with a knife and you are done!  Bake, cook, and chill.

This recipe kind of makes you feel like a fancy chef!!
